Shortbread

Shortbread biscuits consist of a fixed ratio of 300 grams of flour, 200 grams of butter and 100 grams of sugar (3:2:1). You can make variations on this by, for example:

  • Replacing part of the flour with finely ground nuts, seeds or oatmeal
  • Choosing specific type of sugar or part vanilla sugar
  • Adding spices and flavourings, such as cinnamon or an essence.

Ingredients

  • 300 grams of dry ingredients, including at least 200 grams of flour
  • 200 grams of vegetable butter
  • 100 grams of sugar
  • Pinch of salt

Recipe

  • Mix all the dry ingredients
  • Cut the butter into pieces
  • Knead together with the dry ingredients until it forms a solid dough
  • Let rest for at least 15 minutes
  • Form into cookies and bake at 160 degrees oC, 12-15 minutes
