Green curry soup

Ingredients
  

  • 1 tsp Thai (green) curry paste
  • 150 grams cauliflower
  • 100 grams spinach or broccoli
  • 1/4 union
  • 100 ml coconut or other plantbased cream
  • fresh coriander optional

Instructions
 

  • Chop the onion and fry in a hot pan until browned.
  • Add the curry paste and fry briefly.
  • Cut the cauliflower (and if used broccoli) into small florets and add these. Fry for about max. 5 minutes.
  • Add the coconut milk and cook until the vegetables are tender.
  • Now add the spinach and optionally coriander.
  • Finely blend with the (hand) blender and add water to your own preference.
  • Optional: garnish with coriander.
