Green curry soup

Ingredients
- 1 tsp Thai (green) curry paste
- 150 grams cauliflower
- 100 grams spinach or broccoli
- 1/4 union
- 100 ml coconut or other plantbased cream
- fresh coriander optional
Instructions
- Chop the onion and fry in a hot pan until browned.
- Add the curry paste and fry briefly.
- Cut the cauliflower (and if used broccoli) into small florets and add these. Fry for about max. 5 minutes.
- Add the coconut milk and cook until the vegetables are tender.
- Now add the spinach and optionally coriander.
- Finely blend with the (hand) blender and add water to your own preference.
- Optional: garnish with coriander.
